Ditch the store bought Pimento Cheese! Weβre diving into a recipe thatβs sure to elevate your culinary adventures: Packin' Heat Pimento Cheese. It is especially important that you shred your own cheese here. The pre-shredded cheese that you can buy in a bag, is coated with flour and other things that prevent the cheese from sticking together. We want to shred it ourselves, as that insures for a smooth, creamy texture to your pimento cheese.
Also, when choosing a beer, make sure it is a malty beer or lager. You do not want to choose a light beer or an IPA, as they can tend to water down or create a bitter taste. A nice, well rounded malty beer such as Sam Adam's or Rocktoberfest, is just the flavor that this recipe calls for.

4 oz Smoked Gouda, roughly chopped into Β½β chunks
6 oz Sharp Cheddar Cheese, freshly shredded
6 oz Medium Cheddar Cheese, freshly shredded
Β½ cup Mayonnaise, we prefer Dukeβs mayo
ΒΌ cup of a malty beer, preferably Sam Adamβs
ΒΌ cup pimentos, diced and drained
2 Tablespoons Worcestershire sauce
1 Tablespoon Whole Grain Mustard
1 garlic clove
Β½ teaspoon Packinβ Heat seasoning
Β½ teaspoon Black Pepper
Add the gouda, Packinβ Heat, beer, garlic clove, mustard, and Worcestershire sauce to the food processor or blender, and set to puree. Run until the mixture becomes smooth, scraping down the sides and repeating the process until smooth in texture.
Add the mayo and pulse just to blend it together.
Pour sauce mixture into a bowl. Add the shredded cheeses, pimentos, and black pepper. Fold the mixture together until mixed well.
Spoon into a serving bowl or mason jar.
Chill in the fridge for 30 min-1 hour prior to serving, to allow the flavors to set in. Or, if you cannot wait, itβs still really good immediately after making it!
Serve with crackers, tortilla chips, on bread for a sandwich, or top a burger with it!
