Slice jalapeños in half and remove seeds.
Fill each jalapeño half with pimento cheese. Keep pimento cheese cold up until the time to fill the jalapeños. This helps prevent the cheese from melting too quick during the smoking/cooking process.
Season dove breasts with Fully Loaded seasoning and place one breast on top of each pimento cheese filled jalapeño.
Starting at the top of the jalapeño, wrap a slice of bacon around the filled jalapeño, and secure with a toothpick or Grill Pin.
Dust popper with Double Action seasoning.
Preheat Smoker or Oven to 275 degrees. Smoke or bake until the bacon has reached the appropriate doneness for your liking. We cooked ours for 1.5 hours.
Remove from smoker and allow to cool a few minutes before serving!
