Wild turkey is the star of these cheesy enchiladas! Feel free to substitute other proteins as well, such as turkey, chicken, ground beef, or shredded pork!

1 pound Turkey meat, cooked and shredded
Β½ cup sour cream
14.5 oz can green enchilada sauce
1 Β½ cups shredded cheddar cheese
1 Tablespoon High Caliber Chipotle Garlic seasoning
8 Flour tortillas
cilantro, optional for garnish
Preheat oven to 350 degrees. Start with roughly 1 pound of cooked and shredded turkey meat. Click HERE to see how we cooked up some wild turkey legs, just for this!
Add Β½ cup sour cream, Β½ cup green enchilada sauce (reserve the remainder), 1 T High Caliber seasoning, 1 cup shredded cheddar, and mix together.
Pour enchilada sauce into a bowl. Dip each tortilla into the enchilada sauce to coat.
Place a few spoonfuls of the meat mixture down the center of each tortilla, and roll up into enchilada shape.
Place each enchilada, seam side down, into a greased 13 x 9 baking dish.
Pour remainder of enchilada sauce on top of the enchiladas.
Top with additional shredded cheese.
Sprinkle the tops of the enchiladas with additional High Caliber seasoning.
Cover with foil and bake at 350 degrees for 15 minutes. Remove foil after 15 minutes and bake uncovered for an additional 10 minutes.
Top with chopped cilantro for garnish, sour cream, hot sauce, whatever youβd like to spice it up! Enjoy!
