These warm and hearty sweet and smoky Cowboy beans are the perfect pick me up on a cold day. We used ground venison for our meat in this dish, but feel free to substitute ground beef or another ground wild game!

These warm and hearty sweet and smoky Cowboy beans are the perfect pick me up on a cold day. We used ground venison for our meat in this dish, but feel free to substitute ground beef or another ground wild game!
1 pound ground venison (or ground beef)
1/2 package of bacon, chopped into small bites, reserve the bacon grease
2 poblano peppers, diced (or substitute with 1 green pepper)
1/2 sweet onion, diced
1 can of Great Northern beans, drained
1 can of Pinto beans, drained
1 can Light Red Kidney Beans, drained
1 can of Pork n Beans, undrained
1/2 cup BBQ Sauce
1/2 cup Ketchup
1/4 cup Mustard
1/3 cup Brown Sugar
Red wine, 1 swoop (or 1/4 cup)
7–8 shakes of Worcestershire sauce
1 Tablespoon Double Action seasoning
1 Tablespoon Smoked Paprika
2 Tablespoons minced garlic
Saute bacon in a dutch oven/pan until all the bacon fat has rendered and the bacon pieces are crispy. Spoon out the bacon pieces and set aside on a paper towel lined plate. Save the bacon grease in the pan.
Add the diced poblano peppers and onion to bacon grease and saute over medium heat for 2-3 minutes.
Add ground venison to the pepper and onion mixture, breaking up and browning the meat.
Add Reload Double Action seasoning and mix throughout, while cooking.
Add minced garlic to mixture, stirring throughout.
Then add the beans. You will drain all of the cans of beans EXCEPT the Pork n Beans, keep the liquids for that! Mix it all up.
Add the BBQ Sauce, ketchup, mustard, worcestershire sauce, brown sugar, and smoked paprika. Mix together
Add back the chopped, cooked bacon and stir.
Turn the stove to low, put a lid on the pot and simmer, stirring occasionally.
After about an hour, when the bean mixture has thickened up some, it is ready to serve!
These Cowboy Beans are excellent served with fixins! Some options are diced jalepeños, shredded cheese, crushed corn chips, sour cream, and don’t forget the side of corn bread!
